Server Admin is where you see DNS entries and that is what should be blank. When you bind a mac to OD the computer should create an account the same way as user accounts create. Workgroup Manager is a different tool not used for DNS. I'm guessing you're on 10.5 or below there but part of what you said doesn't sound right. In a Mac environment bonjour seems good enough for clients, servers we add to DNS not clients. Whatever is doing DHCP makes no difference. It's a Apple thing, PC's have done it since Windows 2000 I think. Mac DNS servers don't allow automatic registration to a DNS server.
